We started HomeBrew Beer Cheese in our kitchen — pairing small-batch local brews with aged cheddar, a pinch of spice, and more patience than we probably had. It turned into something the whole neighborhood wants a taste of.
HomeBrew Beer Cheese began the way a lot of good things do — with a weekend brewing project, a block of sharp cheddar, and a stubborn belief that cheese dip could be something more.
We started pairing our own homebrew with aged cheeses, experimenting with heat levels, herbs, and textures. Friends tasted it. Then their friends. Before long, people were showing up at our door asking when we'd start selling it properly.
So we did. Every batch is still made by hand, right here in Nicholasville, using real cheese and real beer from Kentucky's craft breweries. No shortcuts. No shortcuts we'd be proud of, anyway.
